Granola
4 cups oats (old-fashioned or quick-cooking or combination of both)
½ to 1 cup unsweetened shredded coconut (more or less according to taste)
2 teaspoons cinnamon
½ teaspoon salt
⅓ cup brown sugar
⅓ cup honey
½ cup vegetable oil
1 teaspoon vanilla
Preheat the oven to 300 degrees. Line a baking sheet with parchment paper.
In a large mixing bowl combine dry ingredients together.
Pour the wet ingredients over the dry ingredients and mix until coated.
Spread onto the prepared baking sheet and bake for 25-30 minutes, stirring carefully half way through.
Cool completely. Store in an airtight container for up to 6 months.
