Flatbread
1 cups very warm water
1 tablespoon yeast
1 tablespoon sugar
½ cup plain yogurt
2 tablespoons olive oil
1 teaspoon salt
3-4 cups flour, divided
Pour warm water into a mixing bowl (I use a Bosch mixer, but you can also make this recipe by hand). Add the yeast and sugar. Let mixture sit for 1 to 2 minutes or until frothy.
Add yogurt, olive oil, salt and 1 ½ cups flour. Mix for 1 minute. Let sit covered for 10 minutes.
Add 1 ½ cups more flour. Mix for 5 minutes. (Add more flour if needed.) Dough should be soft and pliable. Let sit covered for 30 minutes.
Rub your hands with a little oil. Scoop dough onto counter and divide into 10 portions. Form each portion into a ball and rub with a little oil. Press each ball into a 6 or 7-inch flat circle. Cover with cloth or plastic wrap and allow to rest for about 5 minutes.
Heat up a griddle, skillet, or grill to about 375 degrees. Cook each flatbread for about 3 to 4 minutes on each side. Time may vary if using grill.
If desired, brush with melted butter and herbs.
