Apple Cinnamon Muffins


1 ½ cups flour

½ cup sugar

2 teaspoons baking powder

½ teaspoon salt

1 teaspoon cinnamon


¼ cup vegetable oil

⅓ cup milk

1 egg

1 cup finely chopped or grated apple


Heat oven to 375 degrees. Combine dry ingredients. Add wet ingredients including apple. Mix until combined. Line a muffin pan with cupcake papers or grease pan. Scoop batter evenly into the pan. In a little bowl stir together 2 tablespoons sugar and ½ teaspoon cinnamon. Sprinkle the top of each muffin with cinnamon sugar mixture. Bake for 16 to 18 minutes. Makes 12 muffins.



Pear Cinnamon Muffins

Replace apple with 15 ounce can of pears, drained and finely chopped (about 1 cup chopped pear).
