Sundance Ski Brownies
My son the skier asked me to make some brownies like the ones sold at Sundance ski resort. He explained that they need to be "big and firm" so they will stay nice while packed in his jacket pocket during an afternoon of skiing. He figured his mom could make brownies just as good as Sundance, and it would save him some money. He said these fit the bill. These brownies are also similar to the ever-famous BYU brownies.
Make a batch of these brownies, cut in large squares, wrap individually in plastic, and store in the freezer. Delicious straight out of the freezer or brought to room temperature. They can also be stored at room temperature if preferred.
½ cup butter, melted
½ cup vegetable oil
1 ½ cups sugar
¼ cup honey
½ cocoa
4 eggs
1 teaspoon vanilla
2 cups flour
½ teaspoon salt
1 teaspoon baking powder
1 cup chocolate chips
Heat oven to 350 degrees. Line a 10x10 inch or 9x13 inch pan with parchment paper, or spray lightly with pan-greasing spray.
In a large bowl, mix together melted butter, oil, sugar, and honey. Stir in cocoa. Add eggs and vanilla and mix well. Add remaining ingredients and stir until combined.
Pour mixture into the prepared pan and spread evenly to the edges. Bake for 24 to 30 minutes, or until done.
