Breakfast Cookies
These delicious and nutritious breakfast cookies are adapted from Six Sisters. They are a satisfying snack when you need something to tide you over between meals or a quick bite in the morning.
2 cups quick oats
1/4 cup shredded coconut
2 tablespoons chia seeds
1 teaspoon cinnamon
3/4 cup peanut butter
1/4 cup honey
1/4 cup applesauce
1 ripe banana
1/2 cup mini chocolate chips
Preheat oven to 325 degrees. In a large mixing bowl, mix together all the ingredients. (I just throw the banana in whole and then use my hands to mix everything together.)
Using a large cookie scoop, drop 12 scoops of dough onto a parchment-lined baking sheet. Flatten the cookies slightly with your hand or flat-bottomed cup (they won't flatten while they bake).
Bake for 12 to 15 minutes, until cookies start to brown on the bottom and edges.
Cool cookies and wrap individually in plastic wrap. Store at room temperature for about 4 days or freeze.
