Pepper Cheese Bread
Follow the recipe for French Bread.
Using half the dough at a time, roll the dough into a rectangle (approximately 12x10 inches). Brush or pat the dough with a little water. Then sprinkle generously with fresh ground black pepper, 1 cup shredded mozzarella cheese, and ½ cup finely grated parmesan cheese. Roll up the dough jelly roll style and pat into a loaf shape. Score the top with 3 or 4 diagonal slashes. Place loaf seam side down on a greased baking sheet or French bread pan. Pat with a little olive oil or, for a crisper crust, brush with a little egg white mixed with 1 tablespoon cold water. Cover with a kitchen cloth, and let rise for 30 or until double in size. Bake in 350 degree oven for 25 to 30 minutes.
