Simple Tomato Pasta
Although this is a fairly quick recipe, be sure to allow the tomatoes and onions to simmer together for several minute to allow for full flavor.
2 tablespoons butter
½ onion, diced
¼ to ½ teaspoon salt (amount may vary depending on how much salt is already in tomatoes)
1-15 ounce can tomatoes (chopped or diced--they will be blended anyway)
8 ounces angel hair pasta
Grated Parmesan cheese
Over medium heat, melt butter in a saucepan. Add the diced onion and salt. Saute onion in butter for a few minutes to soften. While onion is sauteing, open can of tomatoes and blend in blender. Add blended tomato to the saucepan of cooking onions. (Be sure to get all the tomato puree into the pan, even if you have to swish a little water in the blender to get the excess.) Bring to a boil and simmer while you prepare the pasta. Place lid on pan slightly askew to allow steam to escape and to catch splatters while sauce simmers. Taste and add salt if needed. (If too salty, add more pureed tomato.)
In another saucepan, cook your pasta according to the package directions. Drain pasta and add to the simmering sauce in the first pan. Toss together gently and simmer for a minute or two. Remove from heat, stir in a handful of grated Parmesan cheese, and serve.
