Biscuits
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup shortening
3/4 cup milk
Heat oven to 450 degrees. In a bowl mix together the dry ingredients. Use a fork, pastry cutter, or your hands to mix the shortening into the dry ingredients; it should resemble coarse sand. Add the milk all at once and gently and quickly stir with a fork just until almost mixed. Use hands to gently knead and pat together. Don't over-mix dough. Sprinkle a little flour on counter if needed and roll or pat the dough into a flat rectangle 1/2 inches thick. Cut out biscuits with a circle cutter. Coat the edges of the cutter with flour before each cut and cut straight down, pulling straight up--avoid twisting the cutter in the dough. (This will allow the biscuits to rise better in the oven.) Place biscuits on baking/cookie tray. Brush tops of biscuits with milk. Bake for 8 to 10 minutes or until tops are light golden brown.
