Rainbow Jello

Colorful striped Jello cubes. Choose any variety of colors and flavors that fit the occasion.

Ingredients
4 6-oz boxes of Jello in flavors of your choice
6 envelopes Knox unflavored gelatin
1 can sweetened condensed milk
Water

In each of four separate bowls, pour a Jello mix and an envelope of Knox unflavored gelatin. Stir the gelatin into the Jello powder.

Bring one cup of water to a boil and pour it over the first Jello/gelatin mixture. Stir until Jello/gelatin dissolves. Pour into a 9x13 glass pan and refrigerate until set, about 20 minutes.

In a medium bowl, prepare the white mixture. Into the bowl add ¼ cup cold water and 2 envelopes of Knox unflavored gelatin. Allow to dissolve, stirring if needed. Add the can of sweetened condensed milk and 1 ¾ cups boiling water. Stir. Divide the white mixture into 3 parts (about 1 cup each).

After the first Jello layer has set, spoon one part of the white mixture over it and refrigerate until set.

Prepare the next Jello layer. (Bring one cup of water to a boil and pour over the Jello/gelatin mixture. Stir until Jello/gelatin dissolves. Spoon onto white layer and refrigerate until set.)

Alternate the colored Jello layers with the white layers, for example, green, white, yellow, white, orange, white, red. If any mixture starts to gel before you are ready to pour it, put the bowl into another bowl of warm water, or microwave for a few seconds.

If the layers set for too long the next layer will not adhere well. Each layer should set for about 20 minutes and should still be slightly tacky when you add the next layer. To avoid creating pits in existing layers, gently spoon the mixture on, rather than pouring.

When the final layer has been added, refrigerate for several hours. To serve, cut into one-inch cubes and arrange on a platter.
