Marshmallow Fondant
16 ounces mini marshmallows
2 tablespoons water
2 pounds powdered sugar
½ cup shortening
Grease microwave proof bowl with shortening. Pour marshmallows and water into bowl. Microwave for about 2 minutes, stopping and stirring as needed until melted and smooth.
Add powdered sugar one cup at a time, stirring or kneading after each addition. Use the shortening to grease countertop and hands. Knead the fondant until smooth and pliable.
Shape into a ball and grease with a little shortening. Wrap in plastic wrap and store in airtight bag or container until ready to use.
