Chocolate Macaroon Bars
1 package chocolate cake mix
1/3 cup butter, softened
2 eggs, divided
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla
2 cups semi-sweet chocolate chips (optional—but adds extra chocolaty gooey goodness)
1 1/3 cups flaked coconut, divided
¾ cup chopped nuts (optional)
Beat cake mix, butter, and 1 egg in large bowl until mixture is crumbly. Firmly press onto bottom of greased 13x9 inch baking pan.
Combine sweetened condensed milk, remaining egg, and vanilla in mixing bowl; stir in chocolate chips, 1 cup coconut, and nuts. Spread over mixture in baking pan. Sprinkle with remaining coconut.
Bake in 350 degree oven for 30 to 40 minutes or until golden brown (center will set when cooled). Cool completely in pan before cutting into bars.
