Brownie Cookies
These fudgy chocolate cookies are a snap to make! Roll them in festive sprinkles for a pop of color.
1 cup butter, softened
1 cup brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla
2 ¼ cups flour
½ cup cocoa
1 teaspoon baking soda
½ teaspoon salt
Heat oven to 350 degrees.
In a large mixing bowl, cream together butter and sugars. Stir in the eggs and vanilla. Add remaining ingredients and mix well.
Form dough into 24 balls. Place ¼ cup sugar in a small bowl. Roll cookie balls in sugar. Place on baking sheet and flatten balls slightly. Bake for 8 to 9 minutes.

This batch is drizzled with melted chocolate and topped with crushed peppermint candy. We topped the cookies while they were still hot. This allowed more of the crushed candy to stick to each cookie since some of the candy melts onto the hot cookie--a delicious holiday treat!
