Apple Cheesecake Bars

Crust
2 cups flour
½ cup brown sugar
¾ cup butter, room temperature

Cheesecake Layer
2 packages (8 ounces each) cream cheese, softened
½ cup sugar
1 teaspoon vanilla
2 eggs

Apple Layer
3 medium tart apples, peeled and finely chopped
2 tablespoons sugar
1 teaspoon ground cinnamon

Streusel Topping
½ cup all-purpose flour
½ cup packed brown sugar
¼ cup quick-cooking oats
½ teaspoon cinnamon
¼ cup butter, room temperature


Preheat oven to 350. In a bowl combine crust ingredients, until crumbly. Press into a 13x9 or 14x10 inch baking pan which has been greased or lined with parchment paper. Bake 12-14 minutes or until lightly browned.

In another bowl, prepare cheesecake layer: beat cream cheese, ½ cup sugar and vanilla until smooth. Add eggs and beat just until combined. Spread over warm crust.

In another bowl, toss apples with cinnamon and 2 tablespoons sugar; spoon over cheesecake layer.

In another bowl, combine streusel ingredients, until crumbly. Sprinkle over apple layer.

Bake 25-30 minutes or until filling is set. Cool in pan on a wire rack 1 hour. Refrigerate at least 2 hours. Cut into bars.
